Using the water bath method, melt 90 of bittersweet chocolate and 100g unsalted butter. Mix properly and let cool down for a bit.
Mix 2 whole eggs and 2 egg yolks with 90g granulated sugar. Make sure the sugar dissolves completely.
Add 90g all purpose flour and mix well.
Now add the lukewarm chocolate mixture and stir properly. The finished lava cake batter should be dark brown, creamy and runny. Check the video to see the desired consistency.
Grease a muffin pan with some butter and dust it with flour. This will create a nice non-stick layer.
Fill the muffin cups with our lava cake batter, leave some space for the cakes to fill. They will rise a bit during baking.
Preheat your oven to 200C or 400F and we are ready to bake. The baking time is crucial, if you bake for too long the center will cook fully and the lava effect will be gone.
7-10 minutes is what you should aim for. We find 8-9 to be the perfect time for our likings, but feel free to experiment.
Serve with a scoop of vanilla ice cream and fruits Add some mint leaves and powdered sugar for decoration.
